                  Fried Clam Puff                                            Millie Leonardson


                   1 Pint Shucked Clams and Liquid                      !4 Cup Milk
                   1 Egg                                                 1  Cup All Purpose Flour
                   1 tsp. Salt                                           1 tsp. Baking Powder
                  Fat for Deep Frying

                  Remove black section from clams- put clams through food chopper. Beat egg and salt;
                  add milk, clam liquid and chopped clams.
                  Sift flour and baking powder together; add to clam mixture and sth- well.
                  Drop by tablespoons full into hot grease (375 degrees F), fry until brown (about 5
                  minutes).
                  Drain on unglazed paper. Makes about 1 dozen.
















                  Black-eyed Pea Salsa                                        Evelyn Altman

                  2  cans black-eyed peas, washed and drained
                  1 small can shoe peg corn (undrained)       6 green onions, chopped
                  1 can Ro-Tel tomatoes                        14 large bell pepper, chopped
                  1 can chopped green chilies                  1 (16 oz.) bottle Wishbone Italian dressing



                  Drain oil off dressing until just spices are in bottom of jar. Pour this over remaining
                  ingredients. Stir and chill. Serve with Frito Scoops.
